Poached turkey breast –1 3-pound turkey breast or 2 1.5-pound turkey breasts ▢½ tablespoon sea salt ▢½ teaspoon freshly ground pepper ▢2 tbsps unsalted butter ▢2 tbsps olive oil ▢6 cups chicken stock ▢10 sprigs of thyme ▢1 small Meyer lemon, thinly sliced Classic gravy ▢2 tbsps unsalted butter ▢2 tbsps all purpose flour ▢1 cup whole milk ▢1 cup chicken stock ▢salt and freshly ground pepper
